Instructions

Step 1/4

Prepare Potato

  • 1 Large Potato (200g)
  • 1 tsp Olive Oil

Preheat the oven to 400°F (200°C). Thoroughly wash and dry the potato, then pierce it several times with a fork. Rub with a bit of olive oil and season with salt and pepper.

Step 2/4

Bake Potato

Place the potato directly on the oven rack or on a baking sheet lined with parchment paper. Bake for 45-60 minutes, or until tender when pierced with a fork.

Step 3/4

Cook Meat

  • 1 tsp Olive Oil
  • 1/2 Small Onion
  • 1 Garlic Clove
  • 150g Ground Beef

While the potato bakes, heat a pan over medium heat with olive oil. Add in onion and cook for about 3-4 minutes until softened. Add in garlic and cook for another minute until fragrant. Go in with ground beef, season with salt and pepper to taste and cook until there no more pink and fully cooked, about 7-8 minutes. Set aside.

Step 4/4

Assemble and Serve

  • 15g Shredded Cheese
  • 50g Greek Yogurt
  • 30g Salsa or Diced Tomatoes
  • 10g Chopped Green Onion

Carefully cut the baked potato open lengthwise and fluff the inside with a fork. Top with cooked meat and shredded cheese of your choice, then stick it back in the oven until cheese melts. Add the rest of your toppings in Greek yogurt, salsa or diced tomatoes, and chopped green onions. Serve immediately.
