Meat Loaded Baked Potato
Baked potato topped with seasoned ground beef, melted cheese, tangy sour cream, and salsa.

Prepare Potato
Preheat the oven to 400°F (200°C). Thoroughly wash and dry the potato, then pierce it several times with a fork. Rub with a bit of olive oil and season with salt and pepper.

Bake Potato
Place the potato directly on the oven rack or on a baking sheet lined with parchment paper. Bake for 45-60 minutes, or until tender when pierced with a fork.

Cook Meat
While the potato bakes, add the ground beef to a skillet with salt and pepper to taste and cook over medium heat until no longer pink and fully cooked, about 7 minutes.

Assemble and Serve
Carefully cut the baked potato open lengthwise and fluff the inside with a fork. Top with cooked meat and shredded cheese, then stick it back in the oven until cheese melts. Add the rest of your toppings in Greek yogurt, salsa or diced tomatoes, and chopped green onions. Serve immediately.
