Instructions

Step 1/4

Prepare Potato

Preheat the oven to 400°F (200°C). Thoroughly wash and dry the potato, then pierce it several times with a fork. Rub with a bit of olive oil or cooking spray, and season with salt and pepper.

Bake Potato

Place the potato directly on the oven rack or on a baking sheet lined with parchment paper. Bake for 45-60 minutes, or until tender when pierced with a fork.

Cook Meat

While the potato bakes, cook the lean ground beef or chicken in a skillet over medium heat until fully cooked. Season with salt and pepper.

Assemble and Serve

Carefully cut the baked potato open lengthwise and fluff the inside with a fork. Top with cooked meat, shredded cheese, Greek yogurt or sour cream, salsa or diced tomatoes, and chopped green onions. Serve immediately.
