Cajun Shrimp Alfredo
Pasta dish featuring cajun spiced shrimp in a lower calorie alfredo sauce.
Step 1/4
Prepare the Pasta
Cook the whole wheat pasta according to the package instructions. Drain and set aside.

Cook the Shrimp
In a small bowl, toss the shrimp with Cajun seasoning, olive oil, salt, and pepper. Heat a non-stick skillet over medium-high heat and cook the shrimp for 2-3 minutes on each side, or until opaque and cooked through. Remove from the skillet and set aside.

Make the Alfredo Sauce
In the same skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. In a small bowl, whisk together the milk and cornstarch until smooth. Pour the milk mixture into the skillet and cook, stirring constantly, until the sauce thickens (about 3-5 minutes). Stir in the nutritional yeast, salt, and pepper. Adjust seasoning to taste.

Assemble the Dish
Add the cooked pasta to the skillet with the Alfredo sauce and toss to coat. Top with the cooked Cajun shrimp. Garnish with chopped fresh parsley and a lemon wedge if desired.
