Kenyan Beef and Potato Pilau
Beef with rice and potato in a broth filled seasoned with Pilau massala.
Step 1/3
Sauté Aromatics and Beef
Heat olive oil in a pot over medium heat. Add the diced onion, sautéing until softened and fragrant for about 3 minutes. Then minced garlic, sautéing until softened and fragrant, about 1 minute. Remove vegetables and add the diced beef, seasoning with salt and pepper to taste and cooking until browned on all sides, approximately 3-4 minutes.
Step 2/3
Add Spices and Rice
Add vegetables back and stir in ground cumin, paprika, cinnamon, ground cardamom, ground cloves, salt, and pepper, cooking for another minute until the spices are fragrant. Add the rice and diced potato, stirring to coat everything with the spices and beef mixture.
Step 3/3
Cook and Serve
Pour in the beef broth, scraping any fond at the bottom of pot and bring to a boil. Reduce heat to low, cover, and simmer for about 20-30 minutes, or until the rice and potato is cooked and the liquid is absorbed. Once cooked, fluff the pilau with a fork and serve hot, garnished with fresh cilantro if desired.
