Step 1/4

Prepare the Rice 

Rinse the rice under cold water until the water runs clear. In a small saucepan, combine the rice with the appropriate amount of water according to package instructions. Bring to a boil, then reduce the heat to low, cover, and simmer for the recommended cooking time (usually 15-20 minutes for white rice, or 40-45 minutes for brown rice). Once cooked, fluff the rice with a fork and set aside.

Prepare the BBQ Chicken and Pineapple Skewers

Preheat your grill or grill pan over medium-high heat. Season the chicken breast cubes with salt and pepper. Thread the seasoned chicken and pineapple chunks alternately onto the soaked bamboo skewers. Brush the BBQ sauce over the skewered chicken and pineapple.

Grill the Skewers

Place the skewers on the preheated grill or grill pan. Grill for about 4-5 minutes on each side, or until the chicken is cooked through and has nice grill marks, and the pineapple is caramelized.

Assemble the Dish

Serve the BBQ chicken and pineapple skewers alongside the cooked rice. Garnish with chopped fresh cilantro and sesame seeds if desired.
